Food contains various components. They are important for our healthy life. In this laboratory, we are studying functional ingredients included in agricultural and fishery food products. For example, phytochemical and poly unsaturated fatty acids are useful for preventing life style-related diseases such as obesity, diabetes, and dyslipidemia. We are screening for these materials from food products.
Evaluation methods are in vitro and in vivo studies. We usually use adipocytes cells, macrophage cells, hepatic cells etc. The active food components clarify by animal experiment. We also analyze functional ingredients contained in foods using high performance liquid chromatography (HPLC) and gas chromatography (GC).
