Our project is how starch and protein are synthesized in rice plant. We construct and select mutated rice lines and analyze biochemical characterizations for modified rice quality. Furthermore, we have an interesting in the food processing of rice flour enable increasing consumption.

Research Theme

Specialty:Plant Biochemistry, Enzymology

Subject:Study on biosynthesis regulation and food application of rice

  • Construction of rice mutation library
  • Selection of mutated rice lines with new character
  • Enzymatic analysis of starch and storage protein biosynthesis
  • Characterization of functional enzymes in rice seed
  • Food processing of rice flour
